One Pot Vegan Chili (V, GF)

This vegan chili is so delicious, simple and it takes no more than 30-40 min to make. One day I was in the mood for chili and I was so sick of eating the canned kind, so I just threw a whole bunch of ingredients in a pot an hoped for the best. There are so many ways to eat this meal, I'll give you guys a few of my favorites: melt some vegan cheese on the top and throw in a few scoops of avocado and eat it like that, eat it with tortilla chips or my personal favorite, top off a baked potato with it. This recipe is perfect to bring to lunch for work. When ever I make a batch I probably bring it everyday until I run out. Ingredients
Olive oil
1 tbsp of minced garlic
1 cup of diced sweet onion
1 cup of diced bella mushrooms
1 15.5 oz can of black beans
1 15.5 oz can of red beans
1/2 cup of vegan ground beef
1 28 oz can of crushed tomatoes
1 packet of taco seasoning
1/2 packet sazon goya
Cooking instructions
1. In a large saucepan, cover the bottom with a layer of olive oil and have stove on medium heat. Add the garlic and let cook until golden brown.
2. Add the onions and mushrooms, let them cook for 5 min while continuously stirring.
3. Mix in the beans and the beef, let cook for 5 more min.
4. Reduce the heat to medium low, add 1 cup of water, half of the taco seasoning and half of the sazon seasoning. Let this cook for 5 more min.
5. Add the rest of the taco seasoning, sazon seasoning and the crushed tomatoes. Mix and then cover this mixture and let it cook on medium heat for 15-20 min.
NOTE: for serving size, i'm not sure how much exactly this makes but it does make quiet a lot!
